Beef red chile enchiladas


This was supper tonight.

First off, they are made with a ton of red chile powder I brought back from a trip to New Mexico, where I grew up.  NM expatriates take that stuff back out of state by the pound when they visit there.

Second, these were hot.  Not just piquant, but seriously endorphin releasing levels of heat.  Think really hot Thai food.  Odds are you couldn't eat it.  You have to grow up eating this kinda stuff.

Third, I can't really give a recipe for them, because I just make them w/o measuring anything.

Fourth, the endorphin release after eating these is about the same as you get at the 4 mile mark on a balls out 6 mile run.

Lived north of Hatch, NM for a while, love food so hot it makes you sweat. Those look good.
