Take any decent New Mexican salsa, like the one from Sadie's, or El Pinto, then doctor it up with some adobo, and you have Los Cautes salsa. That odd, smokey, sweet flavor it has comes from that.
Los Cuates salsa is a cult thing, and I'm not in that cult. But I deciphered that recipe recently whilst cooking something else.
